Marjoram is a small perennial plant, with hairy stems and dark green oval leaves. It is native to the Mediterranean region and North Africa and was often planted in graveyards to bring peace to the departed spirits. The Latin name may be derived from major, meaning “greater”, not because there is a lesser variety, but in the sense of conferring longevity. The species name, oreganos, is derived from two Greek words, oros and ganos, which together mean “joy of the mountains”. The herb is used extensively in cooking. The essential oil is extracted from the leaves; it has a very bitter taste and a refined fragrance.
